It’s July, and the mercury is rising!
Do you struggle to keep the healthy eating on track in the summertime, when all anyone really wants is ice cream? Sometimes it’s too hot to even think about heating up your kitchen cooking a full course meal. Try a salad. This salad recipe is packed with healthy, seasonal ingredients that won’t break your wallet and yet touch all of the desired food groups for dinner. Better yet- it’s a one “pot” meal so there’s less mess to clean up!
Southwest Steak or Chicken Salad
1 head of romaine lettuce, washed and stem cut off- tear into pieces
1 sliced and de-seeded cucumber, sliced thin
1/2 a small bag of baby carrots or 1 whole carrot, sliced
2 tbsp of sunflower seeds
About 3/4 lb of grilled chicken or streak (leftovers are perfect) sliced into strips
4tsp of taco seasoning. (if you like more heat try 2 tsp of chipotle sauce instead)
1/2 cup ranch dressing
Mix the seasoning well into the dressing. Let it sit to combine flavors
Toss salad ingredients, top with meat of choice.
Drizzle with dressing just before serving.
